Flourless Monster Cookie Recipe | Easy & Delicious

The BEST and easiest flourless monster cookie recipe for any baker! These are super soft, thick, and filled with peanut butter, oats, M&Ms and chocolate chips. The best part? No standing kitchen mixer is needed. All the mixing is done by hand!

What are Monster Cookies?

A flourless monster cookie recipe is also known as a kitchen sink cookie recipe. It’s an everything kinda cookie that combines chocolate chip, peanut butter, and oatmeal recipes in one.

This is very similar to my 3-cookies-in-1 recipe: Peanut Butter & Chocolate Chip & Oatmeal.

Monster cookies are naturally flourless because it only contains oats as its thickener. Baker love ’em because they do not require a standing kitchen mixer, no chilling is required, and it is a delicious cookie that is loved by many cookie fans.

Ingredients for Flourless Monster Cookie Recipe

  • Old fashioned oats: Do NOT use instant oats! If you need the cookies to be gluten free, use gluten free certified oats.

  • Unsalted melted butter: Adds flavor and chewiness to the cookie recipe
  • Peanut butter: Use a plain or chunky unprocessed peanut butter. Avoid any with high sugar count because it will make the cookie too sweet.
  • Eggs: To bind the monster cookie recipe together.
  • Salt: To add and enhance the flavor. Always use fine sea salt.
  • Brown sugar: For sweetness and chewiness.
  • Vanilla extract: To balance and add flavor.
  • Dark chocolate chips: Use your favorite brand! Semi-sweet is OK, too! If you do not have chocolate chips, a chopped dark chocolate bar is a perfect substitute.
  • Chopped nuts: Use whatever nuts you desire. I used a mixed nut variety. Walnuts or pecans are a great option, too!
  • M&M’s: Of course! I use plain, but feel free to use whatever variety of M&M’s you desire. One Super Share 3.14 oz package is enough for a recipe.

  • You can also add other ingredients to this monster cookie recipe. Other popular mix-ins are: shredded coconut, butterscotch chips, dried cranberries, or white chocolate chips.

Steps to make flourless monster cookie recipe

This recipe is crazy easy! It takes two bowl, one for the wet ingredients and one for the dry ingredients.

Step 1: In a medium size bowl, combine the wet ingredients: add 1 cup peanut butter, 2 tablespoons unsalted melted butter, 1/2 cup brown sugar, 2 eggs, and 1 teaspoon vanilla. Mix with a spatula until completely blended.

Step 2: In a different medium size bowl, combine the dry ingredients: add 1 cup oats, 1/2 teaspoon baking soda, 1/2 teaspoon cinnamon, and 1/2 teaspoon salt. Mix with a spatula until blended.

Step 3: Now, add the dry ingredient bowl to the wet ingredient bowl. Mix with a spatula until completely combined and uniform.

Step 4: Add 1/4 cup chocolate chips, 1/4 cup chopped nuts, and 1/4 cup M&Ms. Mix again with spatula. The extra M&Ms are for the outside of the cookie dough.

Add your mix-ins at the very end.

Step 5: Mix together until uniform.

Using a spatula, mix until blended.

Step 6: No chilling is required! Simply scoop onto a parchment lined cookie tray and bake. Use a small cookie scoop or tablespoon to portion the cookie dough.

Ingredients

  • 1 cup peanut butter, your choice

  • 2 tablespoon unsalted melted butter

  • 2/3 cup brown sugar

  • 2 eggs

  • 1 teaspoon vanilla

  • 1 cup old fashioned oats

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon ground cinnamon

  • 1/2 teaspoon salt

  • 1/4 cup dark chocolate chips, your choice

  • 1/4 cup chopped nuts, your choice

  • 1/4 cup plus more M&M’s (One Super Share 3.14 oz package)

Directions

  • Preheat oven to 350 degrees F. Parchment line 2 cookie trays
  • In one medium bowl, mix the wet ingredients: 1 cup peanut butter, 2 tablespoon unsalted melted butter, 2/3 cup brown sugar, 2 eggs, and 1 teaspoon vanilla. Mix with spatula until combined and uniform.
  • In another medium bowl, mix dry ingredients: 1 cup oats, 1/2 teaspoon baking soda, 1/2 teaspoon cinnamon, and 1/2 teaspoon salt. Mix with a spatula to blend uniformly.
  • Add the dry ingredients to the wet ingredient bowl. Using a spatula, mix until unform and combined.
  • Add your mix in’s:1/4 cup dark chocolate chips, 1/4 cup chopped nuts and 1/4 cup M&Ms. Using a spatula, mix until combined and uniform.
  • Using a mini cookie scoop or tablespoon, scoop small balls of dough onto the parchment lined cookie trays. This recipe makes 10-12 cookies. Place 5-6 cookies on each cookie tray.
  • To each cookie dough ball, add 3-4 extra M&Ms to the outside. This makes sure the candy is visible on the outside once done baking.
  • Bake for 10-12 minutes or until the edges are slightly golden. Cool and enjoy.

Notes

  • Use your favorite peanut butter. Creamy or chunky works!
  • Use your favorite chocolate chips. Semi-sweet, dark, peanut butter, pick whatever you have!
